Why won't my hair get perfectly straight when I flat iron it?

It straightens out a bit, but it doesn't completely get straight. It would sometimes curve in some places, like it would curve outward. I have been using tresseme heat tamer and chi silk infusion on my hair before and I use a really good flat iron. I sometimes put the temp on 350, is that too low? Maybe I am doing it too fast?
